Graduation Extravaganza

My niece graduated high school and her mom asked if I would do her cake.  Of course I was thrilled and said yes.  The “cake” turned into 300 cupcakes and an 8″ display cake.  It was a ton of work, but in the end I felt a great sense of accomplishment – and my niece loved the display. 

Her mom purchased a display to hold 300 cupcakes.  It fit them nicely, but we almost lost the entire thing when it began to collapse under the sheer weight of the cakes.  My daughter saved the day with her keen eye – we caught it just as it began to fall.  Thanks to a few coffee cups, we had it nicely supported in no time.
