Communion Cupcakes

I just finished a set of Communion cupcakes for my daughter’s friend. Her son is receiving the sacrament today. She requested a mix of chocolate and vanilla cakes. Sounds simple right? I have a few really good recipes for each flavor – this should have been easy. WRONG! I decided to try new recipes – ones that use real vanilla beans and shaved chocolate. The problem here was not that I wanted to expand my horizons – it was that I am addicted to reading recipes. Once I find one that sounds really interesting, I’ve got to try it. To my credit, the vanilla batch came out looking, smelling, and tasting pretty good. The chocolate batch – well, not so much. I returned to my “tried and true” chocolate cake recipe for those, and all was right with the world.
